Healthy Oats, Potato, and Mushroom Cupcake-Sized Baked Pies!

Here's a delicious and nutritious recipe for Oats, Potato, and Mushroom Cupcake-Sized Baked Pies:

Ingredients:

  • 1 cup Instant oats or rolled oats
  • 2 large potatoes, peeled and diced
  • 1 cup mushrooms, coarsely chopped
  • 1/2 cup full cream milk (or dairy-free milk for a vegan option)
  • 1/4 cup cooking cream (or dairy-free cream)
  • 1/4 teaspoon cinnamon powder
  • 1/4 teaspoon cardamom powder
  • 2 tablespoons butter (for greasing)
  • Shredded cheddar cheese for garnish (as desired)
  • Salt and pepper to taste

Instructions:

1. Preheat the Oven

  • Preheat your oven to 375°F (190°C). Grease a muffin tin with butter.

2. Prepare the Potatoes

  • Boil the diced potatoes in a pot of salted water until they are semi-tender, about 7 minutes. Drain and set aside.
  • Once the potatoes have cooled throw them into a mixer or hand blend with the milk and cooking cream - I like them lumpy but you can make it smooth too 

3. Sauté the Mushrooms

  • In a skillet, heat 1 tablespoon of butter over medium heat. Add the chopped mushrooms and sauté until they release their moisture and become tender, about 4-5 minutes. Remove from heat and set aside.

4. Prepare the Oats Mixture

  • For rolled-oats - in a blender or food processor, pulse the rolled oats until they form a coarse flour-like texture.
  • For instant oats - just pour boiled water over it and mix well.

5. Combine Ingredients

  • In a large mixing bowl, combine the potatoes, sautéed mushroom mixture, and oats. Stir until everything is well combined. Adjust the cinnamon and cardamom to your liking.

6. Fill the Muffin Tin

  • Scoop the mixture into the greased muffin tin, filling each cup to the top.
  • Garnish each pie with shredded cheddar cheese to your liking.

7. Bake

  • Place the muffin tin in the preheated oven and bake for 30-45 minutes or until the tops turn golden brown, and the milk has evaporated.

8. Serve

  • Allow the baked pies to cool and set for a few minutes in the tin, then carefully remove them using a silicon spatula spoon.
  • Serve lukewarm and enjoy your flavorful Oats, Potato, Mushroom, and Cheese Cupcake-Sized Baked Pies!
