If you are to invite a Maldivian over for breakfast make sure you make mashuni!
1 cup freshly grated coconut
1 fresh red chili - chopped or 1/2 a Scotch Bonnet
1 canned tuna - 40g or Smoked Tuna
1/2 cup onion - finely sliced
1 lime - freshly squeezed juice 2-3 Tbsp
Salt to taste
In a bowl add the sliced onion, chopped chilli and lime juice.
With a gloved hand squash the ingredients until the onion slices become slightly translucent, add in salt to your liking.
Next on add in the tuna and mix it well by hand with a bit of a knead, so that all the flavours get infused into the tuna.
Finally throw in the grated coconut and give it one last mix - just make sure that the grated coconut gets distributed evenly.
There you have it - delicious Maldivian Mashuni in under 10 minutes!
It goes well it flat bread (Roshi or Roti) somewhat like tortilla, made from wheat flour.
For added nutrition mashuni can be made with leafy greens like kale and spinach.
Vegetable options like steamed pumpkin, eggplant and moringa drumstick pulp all goes well with it too.
