Baked Beans With Smoked Tuna - Maldivian-style

 

Imagine a serene Maldivian morning, the sun glistening on the Indian Ocean. Start your day with the authentic flavors of the Maldives. Our Maldivian-style Smoked Tuna and Curry Beans on Toast is a fusion of local and global tastes, transporting you to the tranquil shores of this beautiful paradise.

Ingredients:

  • 2 slices of traditional Maldivian roshi bread (or whole-grain bread)
  • 1 can (15 oz) of baked beans in tomato sauce
  • 1/2 cup of Maldivian smoked tuna fish
  • 1/2 teaspoon of coconut oil (or butter for toasting)
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • A handful of fresh curry leaves
  • 1 tablespoon lime juice
  • 2 tablespoons of tomato paste
  • Salt and pepper to taste
  • Freshly chopped green chilies (optional, for extra heat)
Instructions:
  1. Prepare the Smoked Tuna:
    • Flake the Maldivian smoked tuna fish into small pieces. If you can't find smoked tuna, canned Maldivian tuna can be used as an alternative.
  2. Toast the Bread:
    • If using traditional Maldivian roshi, lightly toast the roshi bread on a hot griddle or in a dry skillet. If using whole-grain bread, you can also toast it.
  3. Butter or Oil the Toast:
    • Lightly brush coconut oil (or butter) over the toasted bread slices.
  4. Sauté Onion, Garlic, and Curry Leaves:
    • In a separate pan, heat a bit of coconut oil. Add finely chopped onion, minced garlic, and fresh curry leaves.
    • Sauté until the onion turns golden brown and the mixture is fragrant.
    • Add in the tomato paste, mix it well and cook for 2 minutes.
    • Add in the smoked tuna flakes or tuna can, give it a good stir and cook on low heat for 3-4 minutes with a lid on.
  5. Heat the Baked Beans:
    • Take off the lid and pour in the can of baked beans, pour in the lime juice, cook for 5-7 minutes stirring occasionally.
  6. Add the Smoked Tuna and Beans:
    • Spread the mixture over the bread.
    • Or you can even spoon the warmed baked beans mixture and roll them up like wraps.
  7. Season and Garnish:
    • Season with a pinch of salt and a dash of pepper to taste.
    • For a spicy kick, add freshly chopped green chilies.
